Bring on peak spring with this latest addition! A common flavor combination of the SWANA region, pistachio and rose can be found in sweets like ice cream, cake, shortbread, and much more. This season, I tried highlighting each flavor visually, so instead of using rose water, I found rose petal powder, and the pistachio kernels sourced in Afghanistan by Ziba Foods that I pulverized are extremely vibrant in their own right. If you look close enough, you’ll see the streaks of pink and green doughs in the final product. It almost felt like playing with Play-Doh putting this one together.
